✨ Dinner Done with Just One Rice Cooker|Salmon Rice and Simple Cauliflower Side Dish
After New Year’s, I inevitably felt tired and spent several days just lazing around. On days like that, I want to make dinner with as little effort as possible. So today, I tried making a “lazy but satisfying dinner” using just one rice cooker to prepare both the main dish and side dish simultaneously. It turned out easier than I expected, and my mom loved it too, so I’m writing it down as a record.
Just set the ingredients in the rice cooker
First, rinse 2 cups of rice.
Rinse quickly just once or twice. Since rice tends to absorb the smell of bran when it’s dry, the key is to do this as swiftly as possible.
Then, simply add the following to the rice cooker:
Maitake mushrooms
Salt-grilled salmon trimmings
Set the timer.
Salmon trimmings are easy to find at the supermarket, and they add great umami flavor to mixed rice dishes.
Make the side dish at the same time.
Place the following in a heat-resistant plastic bag:
- Cauliflower
- Thinly sliced bacon
- Salt and pepper
- Butter
Squeeze out excess air, then place the bag directly on top of the rice cooker.
Then, just press the cook button when it’s time for dinner, and both the main dish and side dish will be ready simultaneously.

🔥 The aroma when it’s done cooking is a feast in itself.
When it finishes cooking, the scent of salmon wafts gently, and the umami of the maitake mushrooms has thoroughly infused the rice.
The cauliflower in the heat-resistant bag is cooked just right, and combined with the savory bacon and buttery aroma, it makes a splendid side dish.
The bag is thick, so using tongs to remove it is safer.
Be careful, as the steam can easily cause burns.

🍽 Plate it up and dinner is ready
The salmon in the takikomi gohan looked incredibly vibrant before mixing, making it very appetizing.
Gently mixing everything while removing bones released a light, fluffy aroma.
Today, Mom said, “I had a big lunch, so I don’t need miso soup,” so I kept dinner simple: just the takikomi gohan, the cauliflower side dish, and some leftover New Year’s kamaboko warmed up on the side.
Even so, Mom said, “This is perfectly delicious,” so I’m glad I made it.

Here’s how it looks plated.

Today, my mother said, “I had a big lunch, so I don’t need miso soup,” so I didn’t make any.
I served takikomi gohan, a cauliflower side dish, and warmed up leftover New Year’s kamaboko to go with it. My mother enjoyed eating it, so I’m glad I made it.

📝 Flavor Adjustment Points
The salt-grilled salmon loses some flavor when cooked in rice, so if you prefer a stronger taste,
- a little soy sauce
- a pinch of granulated dashi
will make it just right.
Sprinkling chopped nori seaweed enhances the flavor even more.
My mother has high blood pressure, so today I served it without adding any extra seasoning.
I’m constantly experimenting with meals to make sure she’ll eat them even when they’re lightly seasoned.
