🥣 Ingredients (Serves 1-2)
- Frozen udon noodles … 2 servings
- Pork (or beef/chicken is also OK) … as needed
- Onion … 1/4 to 1/2 onion
- Granulated dashi (half bonito, half kelp) … as needed
- Soy sauce … 1-2 tablespoons
- Mirin … 1 tablespoon (or a little sugar if unavailable)
- Sake … 1 tablespoon
- Green onions … to taste
- Chili pepper (optional)
🍲 Instructions

Add water to a pot, add the granulated dashi (half bonito, half kelp), and bring to a boil.
Add seasonings
Once boiling, add sake, soy sauce, and mirin (or sugar).
This completes the simple udon broth.
Simmer meat and onion


Add onion and pork to the broth and simmer.
You can also use beef or chicken instead of pork for a delicious result.
Add green onions


Add chopped green onions to the pot and warm them lightly.
Add frozen udon noodles


Add the frozen udon noodles to the warmed broth. Once they separate, it’s ready.
Serve the udon

First, serve the udon noodles alone in a bowl.
Pour the broth

Reheat the broth in the pot and pour it over the udon in the bowl.
Finish

Arrange the toppings neatly and serve.
Add chili pepper to taste if desired.
